Food always plays a significant role in Taiwanese culture. We Taiwanese even mention eating while greeting with others. In Taiwan you can see the food stands and restaurants everywhere. Because of Taiwan's unique geography and history, Taiwanese cuisine extremely varies in ingredients, methods, and flavors. You can taste any kinds of dishes in Taiwan no matter northern Chinese cuisines such as roasted duck or southern flavors such as Mapo tofu. In addttion, since Taiwan locates at the confluence of differents cultures, it's easy to find authentic food of other countries, for instance, American burgers, Japanese suishi, Italian pizzas and so on. You cannot be too careful to say Taiwan is a paradise for gluttons. And Taiwan's unique local cuisine is even popular all over the world, and once tasted, it will be unforgettable forever.

Gua bao

Gua bao is a hamburger in Taiwanese style. Or you can say it's a kind of Steamed sandwich. It consists of a slice of stewed meat and other condiments sandwiched between flat steamed bread known as lotus leaf bread. The bun is typically 6–8 centimetres (2.4–3.1 in) in size, semi-circular and flat in form, with a horizontal fold that, when opened, gives the appearance that it has been sliced. The traditional filling for gua bao is a slice of red-cooked pork belly, typically dressed with stir-fried suan cai (pickled mustard greens), coriander, and ground peanuts.

Because the appearance of Gua Bao looks like a full traditional wallet, Taiwanese takes the metaphor of its wealth satisfaction.  We eat Gua Bao, especially in the end of year, to wish we can still make a fortune and have our walley filled with money in the following years.

蚵仔煎 Oyster Omelet

Oyster Omelet can be found in almost every night markets and has constantly been ranked by many foreigners as the top dish from Taiwan.  Oyster omelets are usually made with oysters, eggs, and Chinese cabbage. Depending on regional variations, a savory sauce may then be poured on top of the omelette for added taste.Spicy or chili sauce mixed with lime juice is often added to provide an intense kick. Many flavors are developed later, such as shrimp omelette, in which Shrimps areb substituted in place of oysters.

臭豆腐 Stinky Tofu

I personally think it's one of the most representative street food of Taiwan and it was voted best night market snack by Taiwanese people last year. Stinky tofu is a form of fermented tofu that has a strong odor. The traditional method of producing stinky tofu is to prepare a brine made from fermented milk, vegetables, and meat . The brine fermentation production can take as long as several months. Taiwanese stinky tofu is cooked with many methods including frying, steaming, cooking in soup, and barbecuing, but is most commonly found in its fried form. The Shenkeng Old Street in New Taipei CIty is known for having an entire boulevard dedicated to eateries serving Taiwanese varieties of stinky tofu.

珍珠奶茶 Pearl Milk Tea / Bubble Tea

If you ask a Taiwanese to choose a beverage that represents Taiwan, the answer is definitely Pearl Milk Tea. Unlike other famous street food in Taiwan, Peal Milk tea 100% originates from 1980's in Taiwan.  In recent years, Bubble tea has been introduced to many other countries and spread widely in a short time. The oldest known bubble tea consisted of a mixture of hot Taiwanese black tea, small tapioca peals (粉圓), condensed milk, and syrup or honey. But now, many variations followed. Bubble tea plays an important role in Taiwan's hand shake beverage culture and it also  greatly enhances the visibility of Taiwan in the world.
